Perfectly Crunchy Kale Caesar Salad

This caesar salad is so satisfying. 

The bright and savory dressing, the texture of the crunchy seeds, the tang of the lemon, and the real star of the show here: the anchovies.  Anchovies lend such a briney funkiness (a good funk!) that make all the difference.  With the tender shredded Lacinato kale and the hard boiled eggs (a soft boil would also be great here if that’s more your speed) it really is the perfect lunch, (or dinner) and a super delicious way to get some anti-inflammatory nutrients!  Also, having extra Caesar dressing in the fridge for future meals is a huge future meal win.  So many options!

Health Benefits of Anchovies 

Besides the fact that they are delicious, here are some additional reasons why we should be eating anchovies:

·  They contain a high amount of Omega 3 fatty acids which are anti-inflammatory and heart protective.

·  They are a great source of many minerals including calcium, zinc, iron, potassium, magnesium, selenium and phosphorous.

·  They are rich in vitamin B3, vitamin D, choline, vitamin B12

·  They are a sustainable seafood choice.

·  In regards to heavy metals - they are one of the least contaminated sources of seafood and are the lowest in mercury.

Crunchy Kale Caesar Salad

Ingredients

Caesar Dressing
  • 1 (1.5 ounce) can anchovies, in olive oil
  • Juice of 1 lemon
  • 2 tbsp dijon mustard
  • 1 clove garlic
  • 1/4 cup grated fresh parmesan 
  • 1 tsp black pepper
  • 1/2 cup extra virgin olive oil
Salad
  • 1 bunch Tuscan (Lacinato) kale, stemmed and cut into ribbons (see video)
  • 4 eggs, soft-boiled or hard-boiled
  • 2 tbsp hemp hearts
  • 2 tbsp pepitas (or nuts of choice)

Instructions

  1. Add all dressing ingredients to a blender or food processor and blend until smooth.
  2. Be sure to taste the dressing and adjust to your liking (I like mine very cheesy and lemony).
  3. In a bowl, toss the kale with the dressing (you're likely to have extra dressing, so apply only your desired amount) and distribute kale onto plates for serving. 
  4. Top with peeled and halved boiled eggs, pepitas, hemp hearts and additional lemon, black pepper and cheese as desired.
